Sachin's Beer Broth Mussels

This recipe is awesome! The Terrapin Sunray Wheat Beer is delicious but feel free to substitute your favorite wheat or "wit" beer.

Sachin’s Spicy Beer Broth Mussels

Serves 3-4 people

*Important: this recipe moves very quickly so remember to prepare all the ingredients before turning on the stove

Special Tools:
Large deep skillet or Wok

Ingredients:
4lbs of FRESH mussels (available at Publix), de-bearded and scrubbed free of barnacles
2 T corn oil
1 red onion finely chopped
2 tsp finely chopped ginger
3 T finely chopped fresh garlic
2 finely chopped Thai green chili, including the seeds!
2 and 1/2- 12oz bottles of Terrapin Sunray Wheat (Beer)
Salt and Pepper to taste
2 julienned green onions (garnish)
½ cup chopped fresh cilantro (garnish)
Toasted French Baguette (for dipping)

Preparation:
1. Prepare all ingredients as listed above.
2. In a large, deep skillet or Wok heat 2T of corn oil to high heat
3. Add the red onion and ginger and sauté until the onions are clear (only a minute or two)
4. Add the chopped garlic and green chili to the pan and sauté for 1 minute
5. Deglaze the pan by adding the Terrapin beers and lowering the heat to medium.
6. Simmer for 1 minute, meanwhile adding salt and pepper to taste
7. Add the cleaned mussels and “steam” them by tossing them in the broth every 15-30 seconds. Continue to toss them over medium heat until most of the mussels have popped open.
8. Remove the pan from the heat
9. DISCARD ANY UN-OPENED OR BROKEN MUSSELS THEY ARE NOT OKAY TO EAT!!!!!
10. Divide the muscles among the serving bowls and ladle the broth evenly over each bowl
11. Garnish the bowls with the green onions and cilantro
12. Serve immediately with a section of the baguette
